Crockpot veggie bean stewII. Spicy egg white scramble on cabbageI’m a very creative person and have been feeling very unfulfilled creatively lately. I previously held a very creative job and loved all the creative juices flowing every day, now my career is quite the opposite- very analytical. I have a whole craft room and haven’t touched a thing, except to make a few small Christmas gifts, in a long time. I couldn’t get my brain around making anything specific. Then I saw this article with Heather Beth Taylor and was really taken aback with her quote, ‘The kitchen is where I’m my most creative’. Little did I realize, as I'm bumming around feeling ‘so uncreative’, that I’ve been using all my creativity in the kitchen. I’ve been cooking like a mad women, creating new recipes, doing my own takes on old recipes, learning more and more about the food we put in our bodies. I’ve been spending hours in the kitchen each night, making dinner and returning shortly after our meal is eaten to begin prepping for lunch the next day- enjoying every second of it. So this is a big shout out to food- thank you for bringing this lady back her groove!
Here's a few of the things I've been making lately. They all look similar but are different, all tasty healthy protein filled vegetarian meals.
