Our garden and CSA has been abundant lately, resulting in some extra delicious summer lunches. 90% of these lunches are made from local ingredients + they are all vegan as per usual. whoo-hoo.
I.Avocado-cucumber sandwiches with homemade humus I.Steamed squash with quinoa, lettuce and various veggies sprinkled with cayenne and rice vinegar + tomatoes and cucumbers from the garden
I.Super tasty tofu veggie stir fry with sliced purple tomatoes and cucumbers on the side + wilty black eyed susans from the yard
I. Spicy tomato dill soup with left over lentils, black beans, and noodles + tomatoes and cucumbers from the garden
