The pleasure of being able to come home during lunch and cook something is so nice for a homebody like myself.  Since I live within a short bike ride to work I'm able to take advantage of this simple pleasure quite often.  I'm a big fan of these sauteed veggies on top of salad greens type lunches, they feel satisfying and filling without weighing you down.  Here is a quick lunch that I made recently.

Lemony Veggie Saute:

Saute green bell pepper, onion, and green beans with small amount of coconut oil and generous amount of lemon juice.

Cook quinoa while veggies saute.

Mix in chopped tomatoes, kale, and arugula when onions and peppers have softened.  Saute on high heat while stirring semi frequently.  Once everything has cooked sprinkle in raisins and a bit more lemon juice, saute until the raisins have warmed.

Match-stick carrots and put on top of spinach.  Layer quinoa and mixed veggies on top of greens, top with sunflower seeds and a small olive oil sprinkle.  Enjoy with a La Croix.
