Simple instructions, familiar ingredients, and easy prep are what draws a recipe close to my heart, along with a great tasting result obviously.  I'm no chef, but I can whip up a thing or two in the kitchen (Eric is a pretty good chef!)  

We usually stick to the same recipes.  Those who know us know that we have different variations of tacos once a week (ok I lied, sometimes twice a week).  So this chicken recipe is an easy one to add into the weekly mix- simple and good tasting.  You can add in most any ingredients you have on hand, and it still works.   The base of this dish is garlic and lemon, as long as you have those, you're good to go. 

Fresh ingredients are the key in my book! 

2-3 Large Garlic Cloves 
5-7 Baby Red Potatoes
2 Handfuls of Fresh Green Beans
1 Large Lemon
2 Chicken Breasts


Chop your garlic and add it to the bottom of a large bowl.  
Chop potatoes into bite size pieces, snip ends of green beans, and add both to the bowl. 


Slice lemon in semi thin slices, carefully squeeze juice into your large bowl while keeping the lemon intact.  Line the bottom of your baking dish with the juiced lemon slices. 
Cut up chicken breast into bite size pieces and put into bowl.  
Generously drizzle olive oil over all ingredients in bowl and season with salt and pepper. Mix everything together making sure each item is coated with the olive oil seasoning. 
Pour ingredients over top of your lemon slices in baking dish. 
Bake on 375 for about 50 minutes. 


This recipe is also really tasty with sliced up onion, it caramelizes and gets extra yummy in the oven.  Feel free to add any or substitute any ingredients.  My mom gave me this recipe a couple of years ago, its been going strong ever since.


Served up on my very favorite dishes, a $7 score for the whole large set, via thrift!
