Preserving lemons is something I've been doing for a while now and just recently have seen it on a couple of recipe blogs.  Since everyone seems to have their own recipe I thought I'd share mine.  Super simple and easy to make on a loop every couple of weeks to make sure your supply never runs out.

Preserved Lemons:
2-3 Lemons, sea salt, whole peppercorns
Cut lemons in medium sized chunks and lightly salt
Stuff lemons in jar, sprinkling with peppercorns as you go
Juice the remaining lemons into the jar until you've covered the lemon chunks completely
Let sit for about 2 weeks

Use as a salad dressing, a lemon juice sub-in, and an additive to nearly anything.
