As per my 'summer must do's' I took a canning class and now I've actually canned some of my tomatoes.
I used up some of the tomatoes from the garden and a few from our CSA basket. I didn't realize how much work it was and ended up staying up till 1 in the morning on a Monday night. Hopefully next time I'll be able to move much quicker since I've done it once before.
In the name of food preservation, I've also been doing a lot of dehydrating. This is my best batch yet; apples, bananas, pears, and peaches. The peaches are out of this world good, I just waited till they were overly ripe and dehydrated them then. Also, this cookie/bar is one of the best dehydrator recipes I've tried, you can find it on my 'Dehydrator Board'.
Finished product, I think they look so pretty on the shelf and it feels so satisfying to know I did it myself. It's also nice to know where my food came from- my organic garden with no chemicals, and how it's stored- in glass jars not cans releasing BPA into my food. I'm planning on doing pickles, applesauce, more tomatoes, and maybe some salsa or relish. Yum.
