As the weather is getting colder (kind of) I have been craving soup. Eric made this tomato soup base and I've been adding different things to make it a different meal the past couple of days. Not sure what his secret recipe is, but he usually throws tomatoes, red bell peppers, spices, jalapeno, etc in the food processor and then cooks it down a little on the stove. For this batch I threw in black eyed peas, left over quinoa, and some arugula. Super filling and very flavorful, a nice September lunch.The Belvedere.
